Ingredients - For an 7"x7" square baking pan

  • 110g unsalted butter
  • 200g white caster sugar
  • 100g dark brown sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 65g all-purpose flour
  • 20g cocoa powder, unsweetened
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 200g semi-sweet chocolate chunks or chips
  • 120g chopped toasted walnuts

Instructions

  1. Preheat oven at 175°C. Line an 7x7-inch square baking pan with parchment paper, leaving some overhang for easy removal.

  2. Spread walnuts on a large baking pan, bake until golden brown. Remove to cool

  3. In a heatproof bowl, combine the butter and semi-sweet chocolate chunks or chips. Melt them together either:

    • Over the Stove: Place the bowl over a pot of simmering water (double boiler method), stirring occasionally until smooth.
    • In the Microwave: Heat in 20–30 second intervals, stirring after each, until fully melted and glossy.
  4. In another bowl, whisk together caster sugar, and brown sugar. Then add the eggs one at a time, mix well. Stir in the vanilla extract.

  5. Once the chocolate mixture is cool, stir into the step 4 until just combine

  6. Place a sieve over the bowl, sift the flour, cocoa powder, salt and baking powder into the bowl. Gradually fold the dry mixture into the wet ingredients until just combined—avoid overmixing!

  7. Gently fold in the chopped walnuts. Reserve a small handful of each to sprinkle on top before baking.

  8. Pour the batter into the prepared pan, spreading it evenly. Top with the reserved walnuts. Bake for 40–45 minutes, or until the centre is just set. A toothpick inserted in the middle should come out with a few moist crumbs—this ensures your brownies stay gooey.

  9. Cool & Slice
    Let the brownies cool completely in the pan before slicing. For clean edges, wipe your knife with a damp cloth between cuts.
